Chia Seed Porridge with chai date and nut topping
Nothing beats a nice, hot, creamy porridge on a winter’s morning. Chia seeds are a great gluten-free alternative to traditional oats and are full of fibre, protein and antioxidants.

Chia Seed Porridge with Chai Date and Nut Topping
(Makes approx 2 servings)
1 cup almond milk
3/4 cup coconut milk
2 bananas, mashed
1/3 cup white chia seeds
1 Tbsp chopped walnuts
1 Tbsp chopped almonds
1 Tbsp pepitas
1 Tbsp sunflower kernels
1/3 cup chopped dates
1 chai tea bag
1/2 cup boiled water
1 Tbsp coconut flakes
Soak the chai tea bag in 1/2 cup boiled water for 3 minutes and then remove tea bag.
Combine all nuts, seeds and dates in a bowl and add the chai tea. Allow to set.
Combine almond milk and coconut milk in a small saucepan and bring to the boil on medium heat.
Reduce to low heat and add chia seeds, stirring to avoid clumps from forming.
Add mashed bananas and stir all ingredients for approx 7 minutes or until mixture thickens.
Scoop porridge into bowls and add date and nut topping, drizzling the chai tea on top as desired.
Garnish with coconut flakes.
