Lychee and berry popsicles

(Makes 10)

Ingredients
400g lychees (approx 3 lychees per popsicle)
2 cups coconut water (I use Raw C Coconut Water)
1/4 cup raspberries (gently broken up)
1/4 cup blackberries (gently broken up)

Method
Peel the lychees and remove the seeds.
Blend lychee flesh and coconut water until smooth.
Distribute liquid into 10 popsicle moulds leaving 1cm gap between top of liquid and top of popsicle mould.
Evenly distribute the raspberries into 5 moulds, stirring gently so the raspberries spread throughout the mould.
Evenly distribute the blackberries into the remaining 5 moulds, stirring gently so they spread throughout the mould.
Place lid on top of popsicle mould and insert paddle pop sticks.
Place in freezerĀ for 4 hours.
Enjoy.
