Mango, chicken and walnut salad

One of my favourite things about Summer is Mangos. As a child I was totally obsessed with mangos; I always looked forward to my mum’s birthday (on Christmas Day) because our family friends who owned a fruit shop would give her a tray of mangos which I would always eat. I was that into mangos as a kid that I even named my goldfish Mango. So now that we know how much I like mangos, I would like to share a delicious mango and chicken salad recipe which I would encourage you to try while it is still mango season. Mango, chicken and walnut salad
(Serves 2)

3 handfuls mixed rocket and baby spinach
1/4 BBQ chook (sliced)
1 mango, skin removed and diced
1/4 cup grated parmesan cheese
1/3 cup walnuts, roughly chopped
2 tablespoons caramelised balsamic vinegar

Divide ingredients in half and evenly distribute on two plates (preferably in the order they are listed). Drizzle the caramelised balsamic vinegar on top. Yum!

I use a BBQ chook because it’s easy and there are left overs to use for other meals. An alternative is to cook 2 medium pieces of chicken breast in a fry pan with oil.
The salad looks prettier if the ingredients are placed on top of each other on each plate rather than mixing it all up first. Just saying.
